Tilapia Dinner for Two
Ingredients:
2 tilapia filets
1 large head of broccoli
Seasonings and oils: 1 lemon, extra virgin olive oil, Old Bay seasoning, Celtic sea salt, and black pepper
Instructions:
Tilapia: Preheat oven to 375f. Coat the bottom of an oven safe dish with olive oil. Place filets in dish and season with Old Bay and a pinch of sea salt. Place a few lemon wedges on top, cover, and bake for 18- 20 minutes.
Broccoli: In a medium bowl mix with olive oil and sprinkle with sea salt and black pepper. Add with the tilapia when there are 10- 12 minutes remaining.
Tip: I love a simple clean-up so the fewer the dishes the better! Most of the time I add my vegetables to the dish my protein is cooking in. I generally add my veggies toward the end because I like them crispy. The longer they cook the softer and more denatured they become.
